Step 1: Uninstall iBooks from your device and reinstall it again from App Store. After download finishes, don't launch the app.
Step 2: Launch iFile. Download it from Cydia if you don't have iFile on your device.
Step 3: Copy iBooks.app from this path: /var/mobile/Applications/iBooksFolder/ to this path: /Applications.
Step 4: Tap /Applications/iBooks.app/info.plist and from the menu select property list editor. Now tap on CFBundleIdentifier and change com.apple.iBooks to com.apple.iBooksFix
Step 5: Close iFile and then respring your device.
Step 6: After respring you'll notice that there are two iBooks apps on the Home screen. Uninstall the one that has rounded corners and keep the one that has a square icon.
Regardless of the fact that this procedure fixes the iBooks crashing problem on iOS 5 firmware, you won't be able to purchase books or sync them from iTunes on your computer. You will have to manually add books to your iBooks library. For that you can use iFile.
Simply launch iFile and tap on the WiFi icon located at the bottom. Then launch any browser you want to on your computer and punch in http://iphone.local:10000/. After it opens up, locate var/mobile/Documents and click on Choose File to upload your iBooks .epub format files to this location. Select each file and click on Upload to sync them. After files have been uploaded, open iFile and once again go to this path: var/mobile/Documents. Here tap on the .epub files that you just uploaded and they will open up in iBooks.
For now this is the only fix that works for iBooks on jailbroken iOS 5 firmware.
